This coffee comes to us from Hacienda La Minita on their micro-lot farm called Finca El Melico. Finca Melico has one of the most unique micro climates, it is a north western facing bowl that maintains cooler temps than elsewhere on the farm. This allows for slower maturation of the cherry and increased sugar content.
At Finca Melico they specialize in growing a bunch of rare coffee varietals and also some experimental processing methods. We’ve brought in a few rare Costa Rica varietals from here in the past including a varietal called Hibrido Tico, all that have some exceptional cupping qualities. This coffee varietal is called Villa Sarchi, it is a dwarf plant and mutation of Bourbon that excels in high altitudes and colder climates. It is also a unique coffee varietal that is pretty much exclusively found in Costa Rica.
We’ve brought in Villa Sarchi from here in the past and are ecstatic to have a limited amount back on our menu again. In the cup you can expect some complex fruit flavors like juicy apple and apricot, overall it's got great sweetness and has a very well structured texture.
