This Peru offering we sourced is a microlot we brought in from a producer in the municipality of Querocoto, Cajamarca. It’s a remote district in Cajamarca’s Chota province, which is newer to coffee cultivation. They are historically and more famously known for their quinine production from native quina trees which are grown among coffee plants here and serve as shade trees.
Despite coffee being a relatively new pursuit in Chota, producers possess a sophisticated understanding of quality harvesting and processing. They do not hire external labor, relying instead on Ayni, an ancestral Inca practice of mutual aid between families and friends. Eduardo learned about coffee from his father, which serves as his primary source of his livelihood as he continues this multigenerational legacy on his farm El Roble.
This lot consists solely of the coffee varietal named Pache, which is a mutation of the Typica varietal. We don’t usually see this coffee varietal as an entire lot or lot separation, it is usually blended with other varietals grown among it. We are always excited to bring in and share single varietal offerings as they are a great way to experience the inherent characteristics that a specific coffee varietal offers.
In the cup you will find some really nice red fruits up front, with some sweet and tart Raspberry, some dark chocolate and a really nice rounded body that make this an incredibly balanced offering. This is a versatile coffee that will work well for all brewing methods, we have especially been enjoying it on filter and as a S.O espresso.
